LOSE THE WHEAT

You are all invited to this special talk by Cindy Springer. Many of you must have seen the book Wheat Belly advertised in the newspapers. It was written by Dr. William Davis, who is a preventive cardiologist, whose unique wheat-free approach to diet, allows him to advocate reversal, not just prevention of heart disease. He is the medical doctor for Track Your Plaque, an online heart Disease prevention programmes, and writes frequently for national publications and health Web sites. He lives with his wife and three children in Fox Point, Wisconsin, where there are no bagels or muffins in his cupboards.

Just over a year ago I read the book, Wheat Belly. I immediately stopped eating wheat. I went on a gluten free diet. As a result, I noticed some changes. Weight loss and an increase in energy were the predominant ones.
Even with these changes, people around me were saying that going gluten free was just a fad diet, and that I would go back to eating wheat. They are wrong on both counts. In fact, I see where I have not gone far enough in eliminating certain foods from my diet, and I needed to make a complete change.
This last week I had the opportunity to listen to an on-line summit on gluten. The summit was created and hosted by Dr. Tom O’Bryan. It consisted in interviews with researchers, professors, doctors and nutritionists. The purpose of the summit was to educate general practitioners and the public about gluten sensitivity.
There is the belief that only those with celiac disease have sensitivity to gluten. They make up about 2% of the population. But these professionals believe that about 30% of the population has a sensitively to gluten, and for many medical condition improve when they eliminate gluten from their diet. My talk will focus on what gluten is, how it affects our bodies, and where we can get more information on this topic.
